Chicken fried rice is a tasty and lovely dish. It is a combo of meat and rice.
Boneless Chicken- 300gms
Ginger- 1 1/2inch
Balck pepper powder- 3tsp
Spring onion- 1bunch
All spice powder- 1tsp
Green peas- 1/4cup
Soya sauce- 1tsp
Clean Chicken properly. Make it small pieces. I will say bite size. heat a pan add 1/2tsp oil. Add cleaned chicken pieces to it also add little salt and 1/2tsp pepper powder to it and cook. Cook for 6mins by that time it will be cooked properly
Remove from pan and keep aside
Break 6 eggs in a bowl and add salt and pepper to it and beat lightly. heat oil in the same pan add beaten eggs and cook. Don't bmake very small piece like bhurji. There should be some bite. Keep aside
Wash and clean rice and soak for 15mins. Then cook rice by adding little oil and salt and keep aside
In the meantime chop onions nd spring onion. Grate ginger and garlic. Chop carrot. Keep aside
Heat oil in a big wok and add chopped onion and white part of spring onion to it and saute properly. Then add grated ginger and garlic to it. Saute again high flame.
Now add chopped carrot and green peas to it and saute. Now add salt and pepper and let it cook
When veggies are done add rice, chicken and egg and also all spice powder and soya sauce and mix properly Season with some more salt and pepper
Garnish the fried rice with green part of spring onion and serve hot
