Chicken Dumplings

Chinese dumplings are the most popular food for Chinese New Year all over the country. There are three types of dumplings, pan fried dumplings, steamed dumplings and boiled dumplings. Pan fried dumplings are crispy and chewer than other two. Steamed dumplings are less famous compared to others. Boiled dumplings are soft, juicy and moist. Dumplings are treated as a street food or side dishes.
I am going to show you how to wrap and how to make the fillings.

Ingredients
- 150 gm refine flour
- Pinch of salt
- 75 ml water approximate for making dough
- For fillings :
- 250 gm chicken minced
- 1 carrot finely chopped
- 1 onion finely chopped
- 1 egg
- 1 teaspoon garlic finely chopped
- 1 teaspoon ginger finely chopped
- 1 tablespoon light soya sauce
- 1 tablespoon crunchy chili sauce
- 1 tablespoon garlic red chili oil
- 1 tablespoon vinegar
- 1 tablespoon sesame oil
- Salt

Instructions
- Take a mixing bowl add chicken minced.
- Add finely chopped carrot and finely chopped onion.
- Add raw egg.
- 1 tsp finely chopped garlic and finely chopped ginger.
- 1 tbsp light soya sauce, 1 tbsp vinegar, 2 tbsp sesame oil and salt.
- 1 tbsp crunchy chili oil and 1 tbsp garlic red chili sauce. Mix all together.
- Make a dough with refine flour, salt and water. Divide into equal sizes and spread with a rolling pin.
- Fill with mixed fillings and close both sides.
- Dumplings shape is shown in the picture.
- Make all the dumplings get ready to boil.
- Take a deep pan add water to sink the dumplings. When the water starts boiling, put dumplings one after one.
- Let boil for 15 minutes then take out from water. Spread separately in a plate.
- Take a serving plate put dumplings.
- Pour soya sauce.
- Pour garlic red chili oil and crunchy chili sauce.
Notes
* Crunchy chili sauce is made by fried onions, fried garlic, red chili flakes lemon grass, green cardamom,and sesame oil.
* Garlic red chili oil made by fried garlic, fried onions, red chili, vinegar and sesame oil.
