Chicken curry with Bamboo shoots is one of my favourite recipe. Some of my friends don't like the pungent smell of bamboo shoots though I like that smell very much. I followed a thai recipe and ingredients for this recipe I collect from an Asian shop. This chicken curry with bamboo shoot recipe is awesome in taste,along with bamboo shoots, flavor and aroma of coconut milk,and lime leaves are just amazing.

Ingredients
- 1 cup of boneless chicken bite size pieces
- 4 small potatoes peeled
- 2 tablespoon onion paste
- 2 tablespoon Ginger garlic paste
- 1 tablespoon fish sauce
- 1 teaspoon Sugar
- 1 cup of coconut milk
- 5/ 6 lime leaves shredded
- 1/2 cup bamboo shoots drained and shredded
- 1 tablespoon paprika powder
- 1 teaspoon white pepper powder
- 2 tablespoon spring onions chopped
- 1 tablespoon roasted peanut crushed
- 1 tablespoon chopped cilantro
- 2 tablespoon olive oil
- Salt for seasoning

Instructions
- Heat olive oil in a frying pan. Add onion paste stir fry for a minute then add ginger garlic paste. Stir fry for another 2 minutes. Then add potato and chicken.Mix very well.
- Add shredded bamboo shoots, lime leaves, fish sauce, paprika powder, white pepper powder, sugar , salt and fry for 2/ 3 minutes.
- Pour in the coconut milk and water (as needed for making gravy), cook in low flame until chicken and potatoes are well cooked. Add coriander leaves chopped peanuts and garnish with spring onion. Serve hot with rice dishes or noodles.
