Ingredients & Quantity
  • Yellow pumpkin chopped to small cubes from 200 gms
  • Chia seeds 4 tea spoons
  • Soaked and peeled Almonds 8
  • Finely chopped onions 2 table spoons
  • Freshly ground nutmeg a pinch
  • Freshly ground black pepper 1 tea spoon
  • Vegetable stock 3 cups
  • Salt to taste
  • Thick coconut milk 200 ml
  • Olive oil 2 tea spoons
How to cook?
  1. Soak Chia seeds in 150 ml of water, keep aside. In a heavy bottomed pan heat olive oil and fry the onions for few seconds. Then add the nutmeg powder , almonds and pumpkin pieces, give few stirs.

  3. Pour a cup of water with required salt and black pepper powder. Simmer the stove and close the pan with a lid. After few minutes the veggies become soft and switch off the stove.

  5. Put them in a blender and make a soft paste out of it. Add the vegetable stock to the paste and mix well and again heat the stuff in a pan. Once they begin to boil well and the soaked Chia seeds to the pan and mix well.

  7. When the soup begins to thicken switch off the stove. Add the coconut milk. Serve hot garnishing with coriander leaves or mint leaves.
