  • For bhature, take both the flours in a big bowl. Add sugar, little bit salt, 1tspn oil and soda in it. Now knead it and make a doughit should be soft. Keep it aside by brushing oil on the dough. Cover it so that it gets fermented.
  • Now Put the soaked Chhole in the pressure cooker. Pu 2glass of water in it. Now add amla, salt in it. Cover it with the lid. Pressure cook it for 3 whistles and then lower the flame for 15 mins. After 15 mins off the flame. Let it cool down.
  • In mean while we start making gravy for Chhole. Take a wok and heat it. Now add 1tblspn oil in t. When heated add hing, jeera and bay leaf. After 15 seconds add ginger paste or ginger jullienes in it. Saute it by adding chhoped onions in it. Saute it
  • Saute onions till it gets brown in color. Now add tomato gravy to it. Let it cook so that it turns bright red in color. Now add dhania powder, red chilli powder, garam masala, chana masala. Stirr it continously. From the cooker take out the amla.
  • Mash it and put in the gravy so that it turns out dark brown in color. Mix this gravy in the chhole properly.let it boil for 10 to 15 mins so that the masala of the gravy is combined to the chhole properly. Stirr it. sprinkle some kasuri methi on it.
  • Here the chhole is ready. Nowtake a bowl and add grated raddish and carrot in to it for kas or salad. Sprinkle some little bit salt and add 1/2 tspn lemon juice to it. Mix it properly. It gives tangy taste.
  • Now for bhatura take a wok by adding oil for frying. Make the balls of the dough. Now make bhaturas in the oval or round shape. Drop it in hot oil. Deep fry them from both the sides.
  • Serve hot with Chhole and muli kas or salad.
