Ingredients
  

  • 2 big sized potatoes
  • 1/4 cup grated carrots
  • 1/4 cup grated beetroot
  • 1/4 cup grated cabbage
  • 2 teaspoon mixed herbs
  • 1 teaspoon dried basil
  • 1 teaspoon chopped garlic
  • 1/2 teaspoon ginger powder
  • 1 tablespoon butter
  • 1/2 cup grated mozzarella
  • Salt
  • Mint leaves

Instructions
 

  • Take big sized potato, rub with butter and bake in oven at 170 degree Celsius for 15 minutes.
  • Don't peel off skin, cut vertically into 2 pieces. Scoop the potatoes evenly make a hole like a bowl.
  • Take a frying pan add I tbsp butter, chopped garlic, chopped carrot, chopped beetroot and chopped cabbage. Stir fry with a high flame. Add salt as per taste.
  • Add ginger powder, paprika and stir again. Fill potato bowl with cooked vegetables. Cover with mozzarella cheese.
  • Bake in a preheated oven for 5 minutes. Sprinkle with dried basil. Serve hot skinned potato, will soft and melt into the mouth. Garnish with mint leaves. That is the beauty of skinned potato.
