Ingredients
For Dough
- 3 cup Wheat Flour (whole)
- 2 tsp Semolina (Suji)
- 1.5 tsp Salt (or as per taste)
- 1/4 tsp Carom Seeds (Ajwain)
- 5.5 tsp Oil
For Stuffing
- Cheese (grated)
- Coriander (Dhania, some chopped fresh)
- Oregano Flakes
Chaat Masala
- Chilli Flakes (some)
- Green Chilli (chopped)
- 1.5 tsp Salt (or as per taste)

Instructions
- First we will knead the dough.. Take wheat flour , semolina , salt and oil. Rub nicely with hand. Add little by little water and then knead semi soft dough. Cover the dough and allow it to rest for 10 to 15 minutes..
- In a bowl take grated process cheese. Add chopped coriander , crushed oregano , chilli flakes , chaat masala . Mix it nicely. Cheese and Chaat masala both are salty, so add salt accordingly ..
- Now take one spoon of filling and fill the cone , which we prepared from dough. Seal it nicely . If you wonTMt seal properly , at time of frying , samosa stuffing will come out.
- Fry in hot oil on medium flame . Fry on medium flame else the crust will not be crispy . Fry till golden brown in colour.
- Serve hot .. Coriander chutney and tomato sauce can be best partners.
Recipe Notes
- For health benefits I have used only Wheat Flour for dough. One can use half half or All purpose flour alone.
- I have used processed Amul Cheese only for stuffing. One can use mozerella or mixed them or one can add even cottage cheese (Paneer).
- I have kept simple , quick and handy stuffing. One can use as per choice ..
- If serving in a party , one can make these samosa bit spicy too.
Additional Tips
- For an extra flavor boost, mix a pinch of chaat masala or finely chopped green chilies into the cheese filling before stuffing the samosas.
- If you prefer baking over frying, brush the prepared samosas lightly with oil and bake at 200°C (390°F) for 18-20 minutes, flipping once halfway through for even crispiness.
- To keep samosas crispy for longer, place them on a wire rack after frying instead of on a plate lined with paper towels, as this prevents steam from making the crust soggy.
- Try adding finely chopped vegetables like bell peppers or sweet corn to the cheese filling for added texture, color, and nutrition—especially appealing for kids.
