- 2 kg baby potato
- 2 tsp ginger garlic paste
- 1 tbsp finely chopped onion
- 1 tsp salt + as per taste
- turmeric 1 tsp
- 2 tbsp lemon juice
- 1 tsp cumin
- 1/2 tsp fenugreek seeds
- 2 tsp red chili powder
- 1 tsp black pepper powder
- 1 tsp dry mango powder
- finely chopped green chili 2 no
- 1 tsp garam masala
- 2 tbsp oil
- coriander for garnishing

- wash and hard boil the potatoes then peel the skin.keep in a large bowl and marinate with 1 tsp salt,lemon juice and turmeric powder ,keep aside for 1/2 an hour heat the oil in wok add cumin and fenugreek seeds,as they pop saute ginger,garlic paste
- roast onion ,add marinated potato and green chili stir for 2 minutes then add red chili,black pepper,dry mango powder,garam masala ,cook it for 5 minutes more and turn off the heat. garnish with coriander and serve hot with pratha or tea .....

you can also add some onion seeds for garnishing
