Cauliflower With Papad

Cauliflower should be fresh. In winter we get fresh cauliflower. It has a good flavor whereas frozen and dried cauliflower will not give you the same flavor. So this is the time to bring fresh cauliflower.
Early times widows have to eat without onion and garlic totally sattik food. So they have to always experiment with various combination. Sometimes they used couscous, sometimes badi and sometimes with fried papad. So they could change their taste in mind. This recipe is one of those.

Ingredients
- Cauliflower 200 grams
- Papad standard sizes 2
- Ginger paste 1 tbsp
- Cumin powder 1 tsp
- Turmeric powder 1/2 tsp
- Asafoetida 1pinch
- Cinnamon powder 1/4 tsp
- Tomato puree 1 tbsp
- Red chilli powder 1/2 tsp
- Oil 2 tbsp
- Salt
- Curry leaves

Instructions
- Wash the flowers with boiling water. Sometimes micro insects may be there which we couldn't see with naket eyes.
- Fry the papad and keep aside. It will be crushed at the final stage of serving.
- Preheat a frying pan add oil. Then add the cauliflower and fry.
- You will find after few minutes colour will gradually become change.
- Now add curry leaves, ginger paste, asafoetida, Tomato puree, turmeric powder, cumin powder, chilli powder cinnamon powder and salt.
- Mix well sprinkle with 2 tbsp water. So all spices will mix together. Finely serve with crushed papad.
Notes
It should serve quick otherwise Papad will get moist. Cauliflower will be soft and crushed papad will be crisp. Both contrast combination will give you a different feelings. Adding fried Papad we don’t need any other masala. Because papad has own aroma if we add extra strong masala that will dominate the natural aroma.
