Cauliflower has an excellent source of vitamin A, C, K and B6. In winter get fresh cauliflower it has less calories.
Here I am going to make a cauliflower dessert which is a lost recipe. This recipe was made for famous poet Rabindranath Tagore on his birthday. Today is 9th may but in Bengali calendar it is 25th Baisakh month. Every year his birthday is celebrated at Shantiniketan in this day.
This is such a dessert without seeing none can believe it is made by cauliflower. I want to introduce the recipe to the young generation which I am going to dedicate to my mother. I choose the recipe because cauliflower was her favourite.

Ingredients
- 1 cup chopped cauliflower
- 1 cup coconut cream
- 2 tbsp roasted semolina
- 2 tbsp roasted gram flour
- 1/4 cup pure ghee
- 1 teaspoon green cardamom powder
- 1/2 cup jaggery powder
- 2 tbsp decicated coconut
- 1 tbsp raisins
- 1 tbsp chopped nuts
- Soaked saffron

Instructions
- Wash the chopped cauliflower with adding little salt in boiling water. So the micro worm will be washed out.
- Then strain the excess water, again wash with drinking water.
- Now take a frying pan roast the semolina with ghee and keep aside.
- Roast the Bengal gram flour and keep aside.
- Now add ghee and cauliflower. Stir continuously with low flame. Slowly it becomes soft mash with wooden spatula.
- Add roasted semolina, roasted gram flour for binding. Add coconut cream stir continuously. When the roasted aroma will spread in your kitchen , then add decicated coconut, green cardamom powder, raisins and soaked saffron.
- Again stir continuously. It will be a soft dough. Take a plate brush with ghee, pour the sweet cauliflower dough. Press with a knife and keep for cooling.
- After 20 minutes cut into barfi shape and serve the dessert.
Notes
When someone bite the dessert can’t guess it is made by cauliflower that is the secret of the lost recipe.
