It's a good way to make kids eat carrots, coconut and oats all at once. They are healthy, tasty, filling and if you glaze them with your choice of dark/white chocolate or cream cheese glaze it will definitely make kids to have atleast one.

Instructions

  • Preheat oven to 180°C
  • Line a baking pan with parchment paper.
  • Beat sugar and butter in a large bowl until light and fluffy.
  • Add in eggs, one at a time and beat until incorporated.
  • Add in vanilla and mix well.
  • In a separate bowl whisk whole wheat flour, oats, cinnamon powder, nutmeg powder, baking soda and salt.
  • Add this dry mix to butter mixture and mix well.
  • Add in grated carrots and coconuts and mix well.
  • Scoop 1inch of this dough onto the pan. Place each ball atleast an inch apart.
  • Bake for 15 min. Base of the cookies would be golden brown when done.
  • I used melted dark chocolate to drizzle over the cooled off cookies. You can use white chocolate/cream cheese or any other glaze of your liking.

Notes

*You can replace eggs with 1/2 cup ripe banana. It will add a nice banana flavour. But it will make the cookies soft.
*You can replace 1 cup brown sugar with 1/2 cup brown and 1/2 cup white sugar to balance the softness due to bananas.
* You can also add 1/2 cup raisins or chocolate chips.
