It's a good way to make kids eat carrots, coconut and oats all at once. They are healthy, tasty, filling and if you glaze them with your choice of dark/white chocolate or cream cheese glaze it will definitely make kids to have atleast one.

Ingredients
- 3/4 th cup butter softened
- 1 cup brown sugar
- 1 cup grated carrots
- 1/2 cup grated dry coconut
- 2 eggs
- 1 cup wwf
- 1 tbsp vanilla extract
- 1 tsp baking soda
- 1 tsp cinnamon powder
- 1/4 tsp nutmeg powder
- 1/2 tsp salt
- 1 and half cups oats

Instructions
- Preheat oven to 180°C
- Line a baking pan with parchment paper.
- Beat sugar and butter in a large bowl until light and fluffy.
- Add in eggs, one at a time and beat until incorporated.
- Add in vanilla and mix well.
- In a separate bowl whisk whole wheat flour, oats, cinnamon powder, nutmeg powder, baking soda and salt.
- Add this dry mix to butter mixture and mix well.
- Add in grated carrots and coconuts and mix well.
- Scoop 1inch of this dough onto the pan. Place each ball atleast an inch apart.
- Bake for 15 min. Base of the cookies would be golden brown when done.
- I used melted dark chocolate to drizzle over the cooled off cookies. You can use white chocolate/cream cheese or any other glaze of your liking.
Notes
*You can replace eggs with 1/2 cup ripe banana. It will add a nice banana flavour. But it will make the cookies soft.
*You can replace 1 cup brown sugar with 1/2 cup brown and 1/2 cup white sugar to balance the softness due to bananas.
* You can also add 1/2 cup raisins or chocolate chips.
