Baked Carrot & Amla Muthia

Muthia is a Guajarati dish where grated vegetables or fenugreek leaves are bound using flour(s) and the kneaded dough is either steamed or fried and tempered using mustard, sesame, chilies and a dash of asafoetida. This is often served as a healthy snack or starter in North Indian Restaurants. Carrot & Amla Muthia is the baked version of this healthy starter using whole wheat flour, besan flour and oats seasoned with red chilies.

Ingredients
- Muthia : ¼ cup whole wheat flour
- ¼ cup Besan Flour
- ¾ cup finely powdered oats
- 1 cup grated carrot tightly packed
- 3 – 4 tbsps finely chopped coriander leaves
- 2 tbsp curd
- 1 tsp red chilli powder
- 1 tsp coriander powder
- ¼ tsp turmeric powder
- ½ tsp cumin powder
- 1 ½ tsp grated fresh ginger
- 1 tbsp grated amla
- 2 tsp oil
- Salt and water as required
- Tempering : 2 tsps oil
- Asafoetida - 1 pinch
- 2 tsp sesame seeds
- 2 red chilies
- Curry leaves
- 1 tsp mustard seeds

Instructions
- Mix all the ingredients given for the Muthia. Add water little by little and mix to get a proper dough consistency(It should not be very sticky)
- Check for salt and spice
- Preheat the oven @200 c
- Place a parchment sheet on a baking tray
- Apply little oil on your hands and make small balls and flatten them on the parchment sheet.
- Bake @ 200 c for 10 mins
- Remove the tray out of the oven and flip the flattened discs
- Bake again @200 c for 10 mins
- Transfer them to a plate and temper the spices in hot oil. Pour it on the baked Muthias and serve hot with mint chutney
