Broccoli Stuffed Potato Skins

These loaded skin potatoes are stuffed with healthy things like broccoli and corn. Added are cream cheese and cheddar cheese along with spices which makes it delicious.

Ingredients
  

  • Two large potatoes
  • 1/2 cup broccoli chopped into small florets
  • 1/2 cup corn
  • 1/2 cup cheddar cheese grated
  • 3 tbsp cream cheese
  • 1/4 cup grated cheddar cheese for filling
  • 1 tbsp ground black pepper
  • Salt
  • 2 tbsp olive oil
  • Chilli flakes for garnish

Instructions
 

  • Preheat oven to 190°C.
  • Line a baking pan with foil.
  • Poke the potatoes all over with a fork.
  • Drizzle 1 tbsp oil on each potato.
  • Sprinkle some salt over potatoes and place them on foil.
  • Bake for 45-50 min or until baked completely.
  • While potatoes are baking, steam cook corn and broccoli florets.
  • When potatoes are baked and they have turned soft, cut them open in the middle part. Do not half into two pieces.

  • With help of a fork scrape the soft baked potato flesh keeping the skin intact.
  • Take this soft baked potato flesh in a bowl and add steamed broccoli and corn.
  • Add cream cheese and cheddar cheese for filling.
  • Add ground black pepper.
  • Add salt to taste and mix thoroughly.
  • Fill the potato skins with this mixture.
  • Top with grated cheese.
  • Back in the oven and bake for another 10 min.
  • Garnish with chilli flakes and enjoy!.
