Brinjal with pumpkin flowers
To make the flower edible we have to remove the stem and stigma of the petals. Pumpkin flowers are known to be full of health benefits it is rich in Vitamin B9 It is bright yellow colour.
There are variety recipes with pumpkin flowers. This is a recipe without onion and garlic. Those who are totally vegetarian they can try this recipe.
I'm making brinjal with pumpkin flowers.

Ingredients
- 10-12 pumpkin flowers
- 2-3 brinjal medium sized
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon Turmeric Powder
- 1/2 teaspoon red chilli powder
- 1 tablespoon mustard oil
- 1 tablespoon mustard sauce
- Salt

Instructions
- Wash the flowers and keep separate. Cut the brinjal and marinate with salt and turmeric powder.
- Make a paste with all the dry spices, turmeric powder, coriander powder, cumin powder and red chilli powder. Mix with water and keep aside.
- Heat oil in a pan add couscous seeds. Add marinated brinjal, cover and cook for a few minutes.
- Open the lid now cover the brinjal with pumpkin flowers. Pour the mixing masala paste. Again cover and cook for a few minutes.
- Finally add mustard sauce (kasundi) and mix all over. Then serve with steamed rice.
