Gotsu is a common side dish for idly or Pongal in Tamilnadu. I love the tangy taste of it. However after coming to Singapore I never made it. This time when I went to India I learnt it from my mom. There are various ways to prepare this dish, in Chidambaram side the brinjal is boiled in water and cooked along with onion’s. In this version of Gotsu, the brinjal is roasted in the fire directly and the smoky taste is simply drooling.Another variation is the tamarind is used raw and not cooked in fire. We use only one spoon of oil for a 500ml gotsu for garnishing purposes.

Notes

Tamarind should be raw and should not be cooked. That’s the taste here.

I love to cook the most authentic way. Most of my recipes are cooked either in claypot or kalchatti / soapstone. They are extremely beneficial as they retain the nutrients. Before cooking a recipe in these vessels I do in-depth research and make sure it is doable in any modular kitchen.
