A Bottle gourd chocolate cake is a perfect way to sneak in vegetables to the little one's favourite cake. It has a very moist crumb and is deeply chocolaty in taste. No one will ever guess the presence of gourd until you spill the beans.

Ingredients
- Fresh bottle gourd/lauki grated - 1 cup
- Whole wheat Flour - 1 cup
- Sugar - 3/4 cup
- Unsweetened Cocoa powder - 4 tsp
- Baking soda - 1 tsp
- Egg -1
- Canola or any odourless oil - 1/4 cup
- Thick curd - 3/4 to1 cup
- Vanilla extract - 1 tsp

Instructions
- In a big bowl, Whisk together sugar, egg and oil. Add the Vanilla extract
- In a separate bowl, sift together the flour, baking soda and cocoa powder. Add this in batches to the egg mixture and mix vigorously.
- Tip in the grated bottle gourd and mix.
- Lastly, add the curd. The quantity of the curd used here will depend on the water content of the bottle gourd. The batter in the end should be thick but loose. It will not be runny or of dropping consistency
- Pour the batter in a desired cake pan and bake in a preheated oven at 180 degrees for forty minutes or till a skewer comes out clean.
- Cool completely .Optionally you can garnish the cake with chocolate sauce or ganache and other sprinkles.
