Bocconcini Salad

Bite-size balls of fresh mozzarella, known as bocconcini, make up this great salad made with cherry tomatoes, cucumber and jalapenos. Bocconcini is a type of cheese that is the size of an egg. This cheese is described by its Italian name which means small mouthfuls.

Ingredients
- ½ cup Bocconcini sliced
- ½ cup Cherry tomatoes halved
- 1 cup Cucumber cubed
- 10-12 Basil leaves
- 10 Jalapeno sliced
- 2 tbsp Olive oil
- 1 tbsp Mustard Sauce
- 1 teaspoon White Vinegar
- 1 tbsp Mayonnaise
- ½ teaspoon Pepper powder
- Salt to taste

Instructions
- For the dressing: In a small bowl mix together olive oil, vinegar, salt, pepper powder, mayonnaise and mustard and whisk well.
- In a large bowl mix bocconcini, tomatoes, cucumbers, jalapeno and tear the basil leaves into 2-4 pieces.
- Add the dressing to the salad just before you serve.
Notes
- For best results use European cucumbers.
- Any soft cheese can be used in this recipe.
