Bitter gourd with dry fish is a famous side dish from the Naga cuisine. It is a zero oil dish. It is prepared with bitter gourd, dry fish, fermented bamboo shoot juice and few other ingredients which We use in our daily cooking. It is an easy and simple recipe which cam be cooked in less thwn 20 mins, just gather all the ingredients in a pot and cook till the water is evaporated completely. It doesn't require a fancy cooking method or technique. So simple to prepare and an exotic dish.

Ingredients
- 4 Bitter Gourd (medium)
- 4-5 Green Chillies (slit chopped)
- 1 large Tomato (optional)
- 1 tbsp Ginger Garlic (crushed)
- 2-3 Fish (dry)
- 2 tbsp Bamboo Shoot Juice (bamboo shoot juice)
- 1-2 tsp Salt (or as per taste)
- Water (as required)

Instructions
- In a pot add the bitter gourd, green chillies, chopped tomato, crushed ginger garlic, dry fish, salt and bamboo shoot juice.
- Add water above the ingredients level, cover it with lid and bring to boil in medium heat. Cook till water is evaporated completely and take off the flame.
- Open the lid and let it cool down completely and serve.
