Ingredients
- bitter guard 1/2 kg
- finely chopped onion 4 tbsp
- salt to taste+ 1 tbsp
- red chili powder 1 tsp
- karela masala 2 tbsp
- turmeric powder 1 tsp
- dry mango powder 2 tbsp
- vinegar 2 tsp
- oil 4 tbsp for frying

- scrape the bitter guard,slit the karelas, remove the seeds and discard them,apply salt and vinegar and leave it for 1/2 hour.then wash them thoroughly.
- heat oil in a pan saute the onion golden,add turmeric.karela masala,salt,dry mango powder cook it for 2-3 minutes,
- stuff the karelas with this stuffing and deep fry one by one in medium hot oil until dark brown .
- you can also boil the stuffed karelas before frying .....
- for karela masala tbsp fennel ,2 tbsp coriander (whole),1 tsp fenugreek seeds. dry roast and grind them coarsely ..
- you can also add grated raw mango instead of dry mango powder..
