Bharwan Karela / Bitter Gourd

  • bitter guard 1/2 kg
  • finely chopped onion 4 tbsp
  • salt to taste+ 1 tbsp
  • red chili powder 1 tsp
  • karela masala 2 tbsp
  • turmeric powder 1 tsp
  • dry mango powder 2 tbsp
  • vinegar 2 tsp
  • oil 4 tbsp for frying


  • scrape the bitter guard,slit the karelas, remove the seeds and discard them,apply salt and vinegar and leave it for 1/2 hour.then wash them thoroughly.
  • heat oil in a pan saute the onion golden,add turmeric.karela masala,salt,dry mango powder cook it for 2-3 minutes,
  • stuff the karelas with this stuffing and deep fry one by one in medium hot oil until dark brown .
  • you can also boil the stuffed karelas before frying .....
  • for karela masala tbsp fennel ,2 tbsp coriander (whole),1 tsp fenugreek seeds. dry roast and grind them coarsely ..
  • you can also add grated raw mango instead of dry mango powder..
