Ingredients for Bharwan Karela / Bitter Gourd

  • bitter guard 1/2 kg
  • finely chopped onion 4 tbsp
  • salt to taste+ 1 tbsp
  • red chili powder 1 tsp
  • karela masala 2 tbsp
  • turmeric powder 1 tsp
  • dry mango powder 2 tbsp
  • vinegar 2 tsp
  • oil 4 tbsp for frying

How to cook Bharwan Karela / Bitter Gourd

  1. scrape the bitter guard,slit the karelas, remove the seeds and discard them,apply salt and vinegar and leave it for 1/2 hour.then wash them thoroughly.
  2. heat oil in a pan saute the onion golden,add turmeric.karela masala,salt,dry mango powder cook it for 2-3 minutes,
  3. stuff the karelas with this stuffing and deep fry one by one in medium hot oil until dark brown .
  4. you can also boil the stuffed karelas before frying .....
  5. for karela masala tbsp fennel ,2 tbsp coriander (whole),1 tsp fenugreek seeds. dry roast and grind them coarsely ..
  6. you can also add grated raw mango instead of dry mango powder..
