  • Heat a pan or wok and add ghee into it.
  • Once the ghee melts, add the besan into it and keep on stirring.
  • After 8 to 10 minutes you will start getting nice aroma. At this point switch off the flame and allow to cool.
  • Add cardamom powder into the mixture and mix well.
  • After few minutes of cooling down when the mixture is warm (so that you can handle it) , add sugar powder and mix well.

Additional Tips

  • For extra depth of flavor, roast the besan (gram flour) on low heat, stirring constantly, until it turns a deep golden color and releases a nutty aroma—this step is crucial for authentic taste and prevents a raw aftertaste.
  • If you prefer a softer, melt-in-the-mouth texture, sift the roasted besan before mixing with ghee and sugar to break up any lumps and ensure a smooth consistency.
  • For a flavor variation, add a tablespoon of finely grated dried coconut or a teaspoon of saffron strands soaked in warm milk to the besan mixture before shaping the ladoos.
  • Store ladoos in an airtight container at room temperature for up to 10 days; if making in advance for festivals, refrigerate them for longer shelf life and bring to room temperature before serving for best texture.
