About Besan Ki Kheer/ Roasted Chickpeas Flour Pudding

I'm excited to share my simple and delicious recipe for Besan Ki Kheer, a traditional Indian dessert that's both comforting and easy to prepare. While this pudding is often made with Punjabi black chickpeas flour, I've given it a twist by using regular gram flour, making it accessible for everyone.
Rich and creamy from slow-cooked milk, this kheer gets its unique nutty flavor from roasted besan and a hint of sweetness from sugar. Garnished with cashews, it offers a delightful crunch in every spoonful. Perfect for a cozy dinner dessert, this Besan Ki Kheer is sure to impress with its irresistible taste and homely charm.

Recipe Notes

Additional Tips

  • For extra depth of flavor, gently toast the besan (gram flour) on low heat until it turns golden and aromatic, but be careful not to let it brown too much, as this can introduce bitterness.
  • If you prefer a silkier texture, strain the cooked kheer through a fine mesh sieve before adding the nuts, which helps remove any lumps from the besan.
  • For a vegan version, substitute dairy milk with coconut or almond milk and use a non-dairy sweetener like coconut sugar; the coconut milk, in particular, will add a lovely richness.
  • To enhance the aroma, add a pinch of cardamom powder or a few saffron strands while simmering the kheer, giving it a classic Indian festive touch.
