Beetroot has several nutrients needed for good health. Beetroot rice is very easy to prepare and also very healthy.

Ingredients
- 1 cup basmati rice washed and soaked for 15 minutes
- 1 beetroot finely chopped
- 1/4 cup green peas
- 1 tsp Ginger garlic paste
- 1 onion finely chopped
- 1 green chilli chopped
- 1/2 tsp garam masala powder
- 1 pinch Turmeric Powder
- 1.5 cup water
- 1 tsp coriander leaves chopped
- Salt
- 1 tsp oil
- 1 tsp ghee
- 2 cloves
- 1 inch cinamon stick
- 2 cardamoms
- 1/2 tsp cumin seed

Instructions
- in a pressure cooker heat oil and ghee
- add cinamon, cloves, cardamoms and cumin seeds
- let them splutter, then add ginger garlic paste, onion and green chilli
- fry till raw smell goes
- then add garam masala powder and turmeric powder and fry for a minute
- add beetroot and peas and saute for 2 minutes
- add salt and soaked rice, give a quick saute till the masalas are micely coated with the rice
- add water and close the lid
- pressure cook for 2 whistles
- once pressure releases, open the lid and transfer the pulav to a serving bowl
- garnish with coriander leaves and serve with raita
