Beetroot is rich in folate ie, vitamin B9 which helps growing body cells. It is great source of fibre, manganese, potassium, iron and vitamin C. We can consume beetroot in any form. I am sharing healthy beetroot pan cake.

Ingredients
- ¼ cup rice flour
- ¼ cup semolina
- ¼ cup pearl millet flour
- 2 tbsp chopped spring onion
- 2 tbsp grated beetroot
- 2 tbsp grated carrot
- 1 tbsp chopped green chillies
- 1 tbsp grated coconut
- 1 tsp roasted cumin powder
- Sesame oil as required
- Salt to taste

Instructions
- Take a mixing bowl add rice flour, semolina, pearl millet flour, chopped spring onion, grated beetroot, grated carrots, chopped green chilies, salt, roasted cumin powder and grated coconut.
- Mix evenly the ingredients then add water as required. Again mix evenly then shallow fry.
- Apply sesame oil on a griddle and pour thick batter. Sprinkle crushed moringa leaves. It may cover with lid.
- Then see whether it is releasing the griddle. Now slowly turn other side, both sides will be cooked.
- Serve with coconut chutney or whatever you like.
