Beans paruppu usali is a concoction of vegetable and protein. Here usually green beans or cluster beans is combined with chana dal to create a spicy and crispy dish. This can be had traditionally with rice and sambar or even as a snack. Paruppu usali was usually made in the olden times when there was a shortage of veggies in the house.
Yield / Serves
Green beans - 12-15 chopped finely
Chana dal - 1 cup soaked in water for 30 minutes
Dried red chillies - 3-4
Salt to taste
Oil - 4 tbsp
Curry leaves - 1 sprig
Mustard seeds - 1 tsp
Grind the dried red chillies and soaked chana dal coarsely in a mixer. Add salt to taste. Mix the chopped beans with it and pressure cook till softened. Add 1 tsp of oil to keep it soft.
Now heat oil in a kadai and add the mustard seeds and curry leaves.
Once aroma is released, add the beans dal mixture. Mix well and cook on medium flame for about 5-10 minutes till it turns crispy and light brown. Serve hot with rice or enjoy as a snack.
