Ingredients & Quantity
  • Eggplant, diced- 01 no. (Optional)
  • Red bell pepper, diced- 01 no.
  • Yellow bell pepper, diced- 01 no.
  • Green capsicum, diced- 01 no.
  • Broccoli, florets- 02 cups
  • Zucchini yellow, diced- 01 no.
  • Zucchini green, diced- 01 no.
  • Carrot, diced- 01 no.
  • Baby corn, diced- ½ cup
  • Mushrooms, halved- ½ cup
  • Red onion, diced- ½ cup
  • Tofu / cottage cheese, cubed- ¾ th cup
  • For the marination:
  • Extra Virgin Olive oil- 01 tbsp.
  • BBQ sauce- 1 ½ tbsp.
  • Balsamic vinegar- 02 tbsp.
  • Soya sauce- ½ tbsp.
  • Black Stone flower, lightly broiled- 1/2 th tsp.
  • Italian dried herb blend- 01 tsp.
  • Black pepper- ½ tsp.
  • Salt- to taste
  • Sugar/ honey- to taste
  • For basting/ brushing the vegetables and grills:
  • Extra virgin olive oil- ½ tbsp.
  • Black Stone flower, lightly broiled- 1/4 tsp.
  • For the garnishing: Parsley, chopped- 1/4th bunch, small
How to cook?
  1. Preparation Time-20 mins + 1 1/2 Hrs. Ref Toss vegetables in olive oil, BBQ sauce, balsamic, soya sauce, Italian dried herb, broiled black stone flower, Black pepper, spices & sugar/ honey.
  2. Seal with a cling wrap and refrigerate for 01-1 ½ hour. Heat the Oil & infuse the Black stone flower in it, strain and use it for brushing / spraying on the grill. Brush or spray grill with olive oil in which the broiled black stone flower is infused
  3. Place vegetables directly on grill in a grilling basket or on skewers on medium/high heat Flip after 05 minutes each side, or until desired doneness. For the serving: Serve hot garnished with chopped parsley.
Notes

Chefs tip:

  • You may use more vegetables as desired, for e.g. Cherry tomatoes.
  • Increase the marination time, if required.
  • You may blanch the broccoli and carrots refresh n then marinate them.
  • You may add minced garlic in the marination to further enhance its flavor.
