Baked Eggs With Chives And Basil

Sunday Breakfast is all about relaxing, experimenting and trying something new rather than running to prepare the lunch boxes and then hurry to reach office and fight traffic. A Lazy Sunday morning calls for something easy let exotic and delicious and nothing can beat Eggs. A simple bread-omelette is an everyday thing but Sunday breakfast means something special and yet you don't want to eat oily poori or paratha. It has to be light, nutritious and quick and easy to make. So sharing my Sunday special breakfast recipe. And I love this recipe because the herbs which I have used in this recipe(Chives and Balcony) are from my Balcony garden. Doesn't it feel exciting and satisfying to grow something on your own.

Ingredients
- 4 egg
- 2 tablespoon of Fresh Chives
- Baby Corn - 5
- Basil Leaves
- Red Capsicum 1/2 Cup
- 1 tablespoon olive oil

Instructions
- Cut Baby Corn in Julienne cut. Dice red capsicum into small cubes. You can use green or yellow bell pepper too.
- Brush the round baking dish with some oil. Preheat the oven to 150 degrees.
- Spread Baby Corn, Red Bell Pepper, torn basil and snipped fresh Chives at the base of the baking dish.
- Break all four egg together and give it a little whisk so that Yolk and white mix nicely.
- Pour the eggs into the baking dish. Sprinkle the top with Salt and freshly ground Black pepper powder.
- Sprinkle few more chives and basil leaves on top.
- Bake it for 10-12 minutes and you can enjoy this breakfast without leaving your bed.
Notes
I prefer organic brown eggs for any egg recipe.
