Baked Beetroot Donuts

Ingredients
- Donuts : ¾ cup whole wheat flour
- 1/8 cup cocoa powder
- 1 tbsp corn flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 tbsp flax seed powder
- ½ cup + 1 tablespoon milk
- 1/8 cup beetroot juice
- 1/3 cup + 1 tablespoon coconut sugar
- 1 teaspoon apple cider vinegar
- 3 tbsp olive oil + Extra oil for greasing donut pan
- ¾ teaspoon vanilla extract
- ½ cup grated beetroot
- Beetroot glaze: 3 tablespoon beetroot juice
- 1 cup icing sugar
- Chocolate sprinkles or chocolate chips to decorate
Instructions
- Grease a donut pan well with oil.
- Sift the flour, cocoa powder, corn flour, baking powder, baking soda and a pinch of salt together in a separate bowl.
- Grate 1 big sized beetroot, squeeze the beetroot juice out of the grated beetroot and set it aside separately.
- In a separate bowl, dissolve sugar in milk.
- Add 1/8 cup beetroot juice.
- Add flax seed powder and mix until well combined.
- Add vanilla essence and oil. Mix well and finally add apple cider vinegar.
- Combine well and add the grated beetroot.
- Add the sifted dry ingredients and fold the ingredients gently.
- Preheat the oven at 160c.
- Scoop the batter into a piping bag.
- Pipe the batter into the greased donut pan and bake at 160c for 10 to 15 minutes in the preheated oven or until a skewer inserted comes out clean.
- Once the donuts are baked, allow them to rest in the pan for few minutes.
- Remove the baked donuts from the pan and allow them to cool on a cooling rack.
- For the glaze, mix the beetroot juice and icing sugar together.
- Dip the cooled donuts in the glaze, sprinkle chocolate sprinkles and allow the glaze to set completely.
- Serve the yummy and healthy donut.
Notes
- Oven timings and temperature varies from one oven to another, hence adjust the timings accordingly.
- Glazing the donut is completely optional. In case if you are not glazing the donuts just add little more sugar to balance the sweetness.
- You can also glaze the donuts using dark chocolate glaze
- Whole wheat flour varies slightly from one brand to another. Add 1 more tablespoon of milk if the batter is very thick.
