Ingredients & Quantity
  • 2 no eggplant large size
  • 3 no tomato
  • salt to taste
  • 2 no whole red chili
  • 1 tbsp chopped green chili
  • 1 tsp chopped ginger
  • 1 tbsp chopped coriander
  • 12 no garlic cloves
  • 1 tbsp chopped garlic
  • 1 tbsp ghee
  • 1 tsp oil
  • 1 tbsp lemon juice or to taste.
How to cook?
  1. Baigan ka bharta requires that the eggplant roasted. So roast the baingan with applying the oil on a medium flame till well cooked with garlic cloves ,and the skin has churned completely.
  2. then the peel off and discard the churned skin. mash it coarsely. now roast the tomato well ,cool it,peel off the skin and mash the tomato.keep aside.
  3. heat the ghee or butter saute the garlic,green chili,and broken red chili for a minute. add mashed tomato. baingan mix well .lower the heat and cook if for 5 to 7 minute.
  4. add ginger,lemon juice and salt turn off the heat. garnish with coriander and serve hot with paratha.....
