Australian Lamington is a cake which is coated with strawberry crush and then rolled on dedicated coconut. Lamington is a juicy and tasty dessert
Yield / Serves
Corn flour- 3tbsp
Strawberry essence- 1 1/2tsp
Baking powder- 1tsp
Baking soda- 1/2tsp
Strawberry jam- 1/2cup
Desicated coconut - 1cup
Grease a baking pan and line with butter paper and keep aside
Preheat the oven for 5 to 6 mins in 200 degree Celsius
In a mixing bowl add maida, corn flour, slat, baking powder and baking soda and mix properly. Shift the mixture twicr and keep aside
In another bowl add sugar and oil and mix properly
In another bowl add milk and vinegar. It may curdle and Don't worry it won't affect the cake
Add the milk to the oil and sugar mixture and mix properly. Then add strawberry essence and mix
Now add dry ingredients to the wet ingredients in two batches. Mix properly without lumps.
Then poured the batter in to the already lined baking pan and put in the preheated oven and bake it for 35 mins in 180degree celcius
Cook up to toothpick comes out clean
Remove from oven and let it cool down completely
Then spread dessicated coconut on a plate. Then cut the cake in squares
Melt strawberry jam
First roll the cake squares on the melted Kam and gain roll on the dessicated coconut and serve
