Australian Strawberry Lamingtons

Australian Lamington is a cake which is coated with strawberry crush and then rolled on dedicated coconut. Lamington is a juicy and tasty dessert

  • Maida- 3/4cup
  • Corn flour- 3tbsp
  • Oil- 1/4cup
  • Milk- 1cup
  • Vinegar-1 1/2tbsp
  • Strawberry essence- 1 1/2tsp
  • Sugar- 1/2cup
  • Salt- 1/4tsp
  • Baking powder- 1tsp
  • Baking soda- 1/2tsp
  • Strawberry jam- 1/2cup
  • Desicated coconut - 1cup


  • Grease a baking pan and line with butter paper and keep aside
  • Preheat the oven for 5 to 6 mins in 200 degree Celsius
  • In a mixing bowl add maida, corn flour, slat, baking powder and baking soda and mix properly. Shift the mixture twicr and keep aside
  • In another bowl add sugar and oil and mix properly
  • In another bowl add milk and vinegar. It may curdle and Don't worry it won't affect the cake
  • Add the milk to the oil and sugar mixture and mix properly. Then add strawberry essence and mix
  • Now add dry ingredients to the wet ingredients in two batches. Mix properly without lumps.
  • Then poured the batter in to the already lined baking pan and put in the preheated oven and bake it for 35 mins in 180degree celcius
  • Cook up to toothpick comes out clean
  • Remove from oven and let it cool down completely
  • Then spread dessicated coconut on a plate. Then cut the cake in squares
  • Melt strawberry jam
  • First roll the cake squares on the melted Kam and gain roll on the dessicated coconut and serve
