Arbi malai kofta gravy is a delicious dish which is liked by the people of every age group. Arbi koftas are made by adding mashed Arbi, coarsely ground mixed nuts (Almond, Hazelnut, walnut and pistachios) and raisins and green chilies. These koftas are very tasty, crispy and nutty in flavor It's very spongy and fluffy unlike potato koftas. These koftas are added to rich malai gravy.

Ingredients
- 1/4 kg Arbi
- 1 tsp Ginger garlic paste
- 1/2 tsp Curry powder
- 4 Green Chillies
- 1/4 cup Nuts (hazelnut, cashew, pistachios, almond and walnut )
- 8 Raisins (chopped)
- 2 tbsp Bread crumbs
- 1 tsp Corn flour
- 1 fistful Coriander
- Salt ( to taste)
- Oil (for frying)
For Malai gravy
For tempering
- 1/2 Onion
- 3 Cloves
- 1/2 inch Cinnamon
- 1 tsp Ginger garlic paste
- 3 tsp Oil
- Salt (to taste)
- 1/2 cup Fresh cream
- Coriander (for garnishing)
- 1 tsp Sugar
- 3/4 tsp Curry powder
- 1/2 tsp Garam Masala
- 1 tsp Chili powder
- 3 Tomatoes
- 1 tsp Kasuri methi (crushed)

Instructions
- Boil Arbi and mash well. Add ginger garlic paste, curry powder and salt to taste. Add cornflour, mix chopped nuts and chopped raisins to it. Add bread crumbs, chopped green chilies and coriander leaves to it. Mix thoroughly. Arbi kofta mix is ready.
- Apply oil in palm and make small round balls. Fry the kofta balls on medium hot oil till it's golden brown. Transfer it to a tissue paper to absorb oil. This Arbi kofta balls can eaten with sauce too.
- Boil water in a wok. Add chopped onions, tomatoes cashew, cardamom, chilies, cloves and cinnamon. Let it boil for 5 minutes. Switch off the flame and let it cool for few minutes. Grind the cooled ingredients in a blender to a fine paste.
- Add oil in a wok. Add cloves and cinnamon. Let it splutter. Add chopped onion, ginger and garlic paste. Let it sauté for a minute. Add the boiled cooled onion, tomato and spice mixture puree to it. Let it boil for few minutes.
- Add chilli powder, curry powder, garam masala powder, sugar and salt to taste. Let it boil for few minutes. When it's done oil starts to float on top of the gravy. Add crushed kasoori methi and fresh cream. Mix well.
- Malai gravy is ready. Add fried Arbi koftas to the gravy. Garnish it with coriander leaves and fresh cream. Restaurant style but innovative Arbi kofta gravy with nuts and raisins are ready to consume with any rotis and flavoured rice.
