This cake is very simple and easy to make, why I have used Mini in the name is because of less ingredients, I could only make a mini loaf and two cupcakes out of the batter 🙂 so see there is a reason behind the name (laughs!). This cake is moist and has bread like texture and making it in a loaf tin was a brilliant Idea.Well there is again a reason behind baking this in a loaf tin. I bought this cute little yellow loaf tin from Home centre and wanted to use it desperately (EEeee) so what better way I could think then using it here to make this yumilicious Apple Walnut Mini Bran Loaf Cake.
I also made vanilla glaze to put on the top but that’s entirely depends on your taste. Now before you run out of patience, let’s talk about the ingredients and how to make this Healthy, Yummy and Luscious Apple Walnut Mini Bran Loaf Cake.

Ingredients
- cup All Purpose Flour â¾
- 1/4 cup Bran Flour
- 1 Eggs with yolk
- 1/4 cup Vanilla Extract th
- 11/2 cup Apple chopped and pealed
- 1/2 cup Sugar granulated
- 1/4 cup Butter
- 2 tbsp Canola Oil
- 1 tbsp Brown Sugar
- 1/2 tbsp Cinnamon Powder
- 1/2 tbsp Baking Powder
- 1 tsp Salt or as per taste
- 1/2 cup Walnut chopped
- For Vanilla Glaze for vanilla glaze
- 1/2 cup Icing Sugar
- 1 tbsp Milk
- 1/2 tbsp Vanilla Extract

Instructions
- Pre heat the oven at 300 degrees
- Sprinkle brown sugar on apple and mix them well and keep aside
- Take a deep bowl, sift all-purpose flour, bran, baking powder, salt and mix together, Keep it aside
- In another bowl, beat butter and sugar till it turns creamy with a hand blender
- Now add egg, canola oil and vanilla extract and again beat it well
- Pour wet ingredient mixture in dry and fold nicely
- Now put 1 cup apple and half walnut into it and fold gently
- Now put 1 cup apple and half walnut into it and fold gently
- Line a baking loaf tin with butter paper, grease it with butter
- Pour the mixture in it, don’t over fill the tin, leave some space to let it rise
- Top the cake with leftover apple and walnut
- Bake it for 30 mins at 180 degrees or till the skewer comes out clean
- Once done, let the tin rest for 10 min and then lit it cook completely on wire rack
- Vanilla glaze - Take a bowl, Add icing sugar milk and vanilla extract and mix well till you achieve a smooth paste
- Once completely cool, you can enjoy this Apple Walnut Mini Bran Loaf Cake in slices pouring vanilla glaze over it. 🙂 Happy baking!
