Apple tray cake is baked using whole wheat flour and fresh crunchy fuji apples. It is topped with lemon toffee sauce to add that extra flavor and punch to the cake slices. Yield / Serves
2 medium sized fuji apples(Peeled and Sliced)
1 Â¼ cups whole wheat flour
1 Â¼ tsp baking powder
1/8 tsp salt
A generous pinch of cinnamon powder
Â½ cup + 2 tbsp brown sugar
Â¼ cup milk
Â¼ cup fresh cream
80 grams unsalted butter
Lemon Toffee Sauce:
50 grams unsalted butter
Â¼ cups powdered brown sugar
Â½ tbsp lemon juice
A pinch of salt
Sieve whole wheat flour, baking powder, salt and cinnamon powder at least 3 times to create proper aeration.
Melt butter using double boiler method and allow it to cool.
Take milk in a mixing bowl and dissolve brown sugar.
Add cream and whisk until itâ€™s slightly fluffy and bubbles are seen.
Combine the melted butter.
Fold the sifted mixture in batches into the wet mixture.
Align a parchment sheet on a baking tray.
Preheat oven @190.
Pour the batter and spread it evenly using a spatula.
Arrange the apple slices on the batter and bake for 40 minutes @190(or until a cake tester comes out clean).
Meanwhile prepare the lemon toffee sauce.
Once the baking is completed, allow the tray to cool down for few minutes.
Pour the sauce over the tray-bake while it is still warm in the pan and gently brush the sauce all over the top of the tray-bake.
Cut into squares and serve warm or cold.
Lemon toffee sauce (Prepare this 15 minutes prior to the completion of baking) 1. Melt sugar and butter in a saucepan 2. Add lemon juice and salt. 3. Whisk the mixture in the pan until the mixture is thick, melted and smooth. 4. Turn off the flame.
Adjust the timings and temperature according to your oven settings.
