Andhra Style Gummadikaya Pulusu / Pumpkin And Coconut Stew

Andhra Pradesh is famous for its stew or Pulusu (Telugu). Gummadikaya or pumpkin stew is one amongst it. This is a simple sweet and sour stew of Andhra. It tastes heavenly when served with hot steamed rice ! and accompanied along with crunchy fryums/vadiyalu/papad 🙂

Ingredients
- 2 cups Pumpkin cubed
- 3-4 Onions small sized, whole
- 1 tablespoon Onion paste
- 1 cup Coconut grated
- 2 Green chili slit
- 2 Red Chili
- 1 tablespoon Red Chili powder
- Salt as per taste
- 2 pinch Turmeric Powder
- 1/4 cup Tamarind Juice
- 1 tablespoon Curry leaves
- 1/4 teaspoon cumin seed
- 1/4 teaspoon Fenugreek seeds
- 1/2 cup Tomato puree
- 1 tablespoon Ginger and Garlic paste
- 2 tablespoon Jaggery powder
- 2 tablespoon Oil
- Coriander leaves for garnishing

Instructions
- Heat Oil in a pan. Add mustard seeds. Once they start spluttering , add cumin seeds, fenugreek seeds, green chili, red chili, curry leaves, ginger and garlic paste . Sauté them for a minute.
- Now add the pumpkin pieces, whole onions and onion paste. Fry them till the onions turn slight translucent.
- Then add salt, turmeric powder, jaggery and red chili powder one after the other. Mix this well. Cover it with a lid and cook on low flame for 7 minutes.
- Once the pumpkin and onion mix is cooked fully or until the raw smell goes off, add the grated coconut, tomato puree and tamarind juice.
- Allow the above mix to cook for five more minutes on low flame. When the stew is cooked on low flame, the sweetness of jaggery along with the sourness of the tamarind juice and the freshness of coconut enhances the taste.
- Turn off the flame and garnish it with coriander leaves and sliced coconut.
- Keep it covered until served. You can serve this hot with Steamed rice.
Notes
- Note that the stew is cooked on low flame to enrich the taste.
