  • Mix flour and salt in a bowl. Knead a soft dough with the help of water . Rest it for 30 min. Keep covered
  • In a bowl talke chopped onions ginger coriander chili. Add salt. Keep it aside for 15 min.if this mix leaves some water then remove that water. Mix everything in beaten eggs. Add pepper
  • Now take one lemon size ball of flour. Roll it out to a 5 cm diameter circle.Drizzle oil all over.sprinkle some flour.fold to semi circle.
  • Drizzle some more oil & sprinkle some flour . Fold to a triangle Roll from all sides with the help of a rolling pin into a triangle.
  • Place it on a hot tawa.cook for few sec & flip it over. Cook few more sec. You will see a layer of paratha starts seperating.

  • Open this slightly with the help of a tongues and make a pocket

  • Carefully fill the egg mixture inside this pocket using a spoon.almost 1 egg mixture can be put inside one paratha.

  • The moment your paratha is filled cover that pocket using the spatula right at the corner.cook for few seconds flip it using spatula. Do it very slowly. Cook for few seconds

  • During this entire process the flame should be low. Also you need to take care that your paratha might not get burnt.
  • Now apply little oil . Flip it over apply oil on other side. flip it over again. Cook for 2- 3 sec. It's done
  • Serve hot with tomato or chili sauce

  • Making paratha this way is tricky as few seconds here here & there can over cook paratha. So everything needs to be done carefully & quickly.
