This Anda Ghotala recipe will completely change the egg game in your family! I had the privilege of learning it firsthand from Chef Saransh Goila during his Master Class at The Gourmet High Street Food Festival, where I cooked this incredible dish alongside him. Hugely popular among school and college students, Anda Ghotala is a true protein powerhouse packed with bold, mouthwatering flavors.
What makes this dish unique is its medley of egg preparations—boiled, scrambled, and half-fried—all mingled together with melty cheese and a punch of pav bhaji masala. Typically served with buttery pav, it's pure comfort food with a twist. Chef Saransh also shared the inspiring story of an egg roll center in Ahmedabad that's been serving this iconic dish for over a decade, which sparked his own take on it and wowed crowds at the Gurgaon festival.

Ingredients
- 5 Eggs (2 boiled - 3 raw)
- 1 Onion (chopped)
- 1 Tomato (chopped)
- 1 Green Chilli (chopped)
- 2 cubes Processed Cheese
- tsp Pav Bhaji Masala (half)
- 1.5 tsp Salt (or as per taste)
- 1/2 tsp Lime Juice (juice half)
- Coriander (Dhania, garnish)
- 2 tsp Oil
- 2 tsp Butter
- tsp Ginger Garlic Paste (half)

Instructions
- Take a pan, put oil add onion , green chillis, ginger garlic paste and saute it for a while. Now add tomato and saute (dont mush them) add all the masala's n mix well
- Now add the Chopped boiled eggs and mix well, break one egg in the centre of the pan and scrumble it. add the processed cheese and mix well.
- Take another pan put some butter. Then break 2 eggs and make a Sunny side up eggs
- Carefully pour these sunny side up onto the Cooked Egg mixture ..Sprinke some pav bhaji masala and garnish it with chopped coriander. Serve Hot with Butter Pav's

- If you prefer a richer texture, add a splash of cream or a small cube of butter while scrambling the eggs to make them even more luscious and indulgent.
- To achieve the perfect balance of tang and spice, squeeze fresh lime juice over the finished dish and sprinkle with finely chopped raw onions and coriander just before serving.
- Make a vegetarian version by substituting crumbled paneer for the eggs and adding a dash more cheese; adjust the cooking time as paneer requires less time to cook through.
