Instructions
- Hard boil the potatoes.
- When cool, peel the skin and cut into cubes.
- In a bowl, mix all ingredients except oil and water. Add water and make a batter of thick consistency.
- Heat oil in a pan.
- Dip the potato cubes in the batter and slowly put a couple of them in the pan.
- Deep fry on medium flame until brown in colour.
- Serve with tomato ketchup.
Recipe Notes
To get hard boiled potatoes, keep whole potatoes to boil and cook them for only one whistle in the pressure cooker.
Additional Tips
- For extra crispiness, double-fry the potato pieces: fry them once at a lower temperature to cook through, then let them cool before frying again at higher heat to achieve a crunchier coating.
- If you prefer a tangy flavor, squeeze a little lemon juice over the hot Alu 65 just before serving or toss the fried potatoes with a sprinkle of chaat masala.
- To make this gluten-free, substitute the self-raising flour with a gluten-free all-purpose flour and add a pinch of baking powder to maintain the light texture.
- Serve Alu 65 on a bed of sautéed bell peppers and onions tossed in a dash of soy sauce and vinegar for an authentic Indo-Chinese presentation and added flavor dimension.
