Aloo turiya masala is a simple but truly homely recipe as it has minimal amount of spices and uses the ubiquitous potato and the less frequently used ridge gourd. It is a gravy based dish and can be had with rice or roti.

Ingredients
- Turiya ridge gourd -1 turiya
- 3 Potato
- 3 Green Chillies
- 4 pods Garlic
- 1/2 tsp Turmeric Powder
- 1/2 tsp red chili powder
- 1 tsp Coriander Powder
- 1/2 tsp Mustard Seeds
- 1/2 tsp Cumin Seeds
- 1-2 tsp Salt or as per taste
- 4 tsp Oil
- 1 tsp Sugar
- Water as required
- to cup Coriander garnish
- to leaves Curry garnish

Instructions
- Peel the ridge gourd and potato and cut into medium sized cubes. Keep aside.
- Heat oil in a kadai and add mustard seeds and cumin seeds.
- Once they splutter, add green chillies, curry leaves and garlic. Saute for half a minute.
- Now add the potato and ridge gourd cubes. Add the dry spices and mix well. Add salt to taste.
- Now add 2 cups of water and let it cook covered for 15- 20 minutes on a medium flame. Stir in between and add water if required.
- Once the potatoes are cooked, add sugar and keep on high flame for 2 minutes. Garnish with chopped coriander and serve with rice or phulkas.
Recipe Notes
Dont overcook the curry.
