  • Turiya ridge gourd -1 turiya
  • 3 Potato
  • 3 Green Chillies
  • 4 pods Garlic
  • 1/2 tsp Turmeric Powder
  • 1/2 tsp red chili powder
  • 1 tsp Coriander Powder
  • 1/2 tsp Mustard Seeds
  • 1/2 tsp Cumin Seeds
  • 1-2 tsp Salt or as per taste
  • 4 tsp Oil
  • 1 tsp Sugar
  • Water as required
  • to cup Coriander garnish
  • to leaves Curry garnish


  • Peel the ridge gourd and potato and cut into medium sized cubes. Keep aside.
  • Heat oil in a kadai and add mustard seeds and cumin seeds.
  • Once they splutter, add green chillies, curry leaves and garlic. Saute for half a minute.
  • Now add the potato and ridge gourd cubes. Add the dry spices and mix well. Add salt to taste.
  • Now add 2 cups of water and let it cook covered for 15- 20 minutes on a medium flame. Stir in between and add water if required.
  • Once the potatoes are cooked, add sugar and keep on high flame for 2 minutes. Garnish with chopped coriander and serve with rice or phulkas.

Recipe Notes

Dont overcook the curry.
