Aloo tamatar sabzi is an easy and quick curry made with potatoes and cooked in tomato gravy. It is prepared without the use of onion and garlic. Aloo tamatar sabzi is an ideal side dish for vrat ki roti during Navratri or fasting days. It can be done in a jiffy as the ingredients required are easily available at home. Ingredients
- 4 Potatoes medium sized
- 5 Tomato chopped finely
- 3 tbsp Cooking Oil
- 1 tsp Cumin Seeds
- 1 pinch Asafoetida
- 1/4 tsp Turmeric Powder
- 1 tsp red chili powder
- 2 tbsp Coriander Powder
- 1-2 tsp Salt or as per taste

Instructions
- HOW TO MAKE ALOO TAMATAR SABZI RECIPE Wash and boil the potatoes with enough water till just cooked. They should not be too mushy. Once cooled down, peel and chop them into equal pieces. Set aside.
- Heat a pan on a medium flame. Add cumin seeds and stir till light brown.
- Add chopped tomatoes and cook till they become little soft and oil is separated from the sides of the pan. Add salt, red chilli powder and coriander powder and mix well.
- Add chopped potatoes and combine together. Add 1/2 cup of water and cook on a medium flame for 6-7 minutes till it reaches a thick consistency. Garnish with coriander leaves and serve aloo tamatar sabzi hot with rotis or puris.
