Ingredients
- 10-15 big size spinach leaves
- 3 potatoes boiled
- 1/4 th cup boiled green peas
- 1 teaspoon oil+ 2-3 tbsp to shallow fry samosa
- 1/4 teaspoon Turmeric Powder
- 1/2 teaspoon mustard cumin, and fennel seeds combined
- 1 teaspoon ginger chilly paste
- 1 teaspoon cumin coriander powder
- 1/2 teaspoon garam masala
- Salt
- Juice of 1 lemon
- Chopped cilantro/coriander leaves
- 1 cup besan
- Water as required
- 1/2 teaspoon carom seeds/ajwain
- 1/4 teaspoon red chilly powder

- wash, clean spinach leaves and gentally roll it with rolling pin so leaves become foldable.
- Heat 1tsp oil in pan. When oil is medium hot, add cumin, mustard and fennel seeds. Once it start cracking, add turmeric and ginger chilly paste and saute it for a minute. Now add boiled potato and green peas. Add all the spices except ajwain.
- Cook potato mixture for 1-2 mins. Add lemon juice and chopped cilantro and mix it well. Mixture is ready, let it cool down.
- For better Take besan in bowl,add turmeric,salt and ajwain. Add water gradually and prepare semi thick, lumpfree better.
- Preparing samosa Raje one leaf, put small lemon size stuffing and put it on the one side of leave. Fold the leave in triangle shape as we fold patti samosa. At the edges seal it with better we prepared. Same way prepare all samosas.
- Tawa fry samosa Heat one tbsp oil in pan when oil is medium hot, pour tge samisa into better first tgen pkace it into oil. Fry it on low to medium flame. When it turns to light briw, flip the side and cook it from another side.
- When it turn into brown and nice and crunchy take it into plate and same way prepare all the samosas. Serve it with tomato ketch up.
