Almond Cookies Using Coconut Sugar !

As part of the BellyNirvana program, got cocounut sugar product from goindiaorganic delivered to my doorstep, This recipe is an attempt to try out coconut sugar for the first time which is a good alternate to regular sugar.

Ingredients
  

  • Almonds - 15 to 20
  • Cinnamon
  • Baking powder
  • Lyva organic Coconut sugar
  • Egg White - 1 to 2
  • Butter
  • Milk as needed to get it to cookie batter consistency
  • Icing sugar for garnish

Instructions
 

  • Grind Almonds and Cinnamon to a fine paste.
  • In a bowl, take the almond cinnamon paste and add coconut sugar and baking powder. Mix well.
  • Next to this dry mixture, add egg whites and butter. Stir continuously to get the mixture to the right consistency required for baking cookies
  • If the mixture is still thick, keep adding milk and stir well until the right consistency is obtained. It should neither be too thick or too watery.
  • Once its ready, use a low rack and a baking tray suited for Microwave convection cooking. Grease the tray with some butter to avoid the cookies being stuck to the base.
  • Line up the cookies in the tray. Pre-heat the oven to about 180 degrees and let the cookies bake for about 15 mins. Keep checking in regular intervals as the baking time could differ on the thickness and consistency of the cookies as well.
  • Once ready, cook it down and garnish with some icing sugar on top and some pista, almonds as sides sprinkled with coconut sugar. As an alternative, you could also try having the cookies with ice cream which kind of gels well in terms of Dessert,

Notes

 Use very less Cinnamon just to bring in the flavor. If its more, the taste could be overpowering and bitter
