Adai, a mixed lentil dosa is a healthy Breakfast dish
It tastes delicious and is mostly served with a chutney. Adai dosa can be made thick or thin, soft or crispy. Today I served dosa with Thakkali Thokku (Tomato chutney). Spicy and tangy chutney is very easy to prepare.

Ingredients
- For Adai Dosa batter:-
- Idly rice 1 cup
- Chana dal 1/4 cup
- Arhar dal 1/4 cup
- Moong dal 2Tbsp
- Urad dal 2Tbsp
- Ginger 1inch
- Whole red chilies 2-3 No.
- Hing 1/4 Tsp
- Coriander leaves chopped 4-5 Tbsp
- Onion chopped
- Salt
- Water as required for preparing batter
- Oil/Ghee as required for preparing dosa
- For Tomato chutney:-
- Finely chopped ripe tomatoes 3 No.
- Finely chopped onion 1 Medium size
- Mustard seed 1Tsp
- Hing A pinch
- Curry leaves 7-8 No.
- Red chili powder 1Tsp
- Sambar powder 1Tsp
- Turmeric powder 1/2 Tsp
- Fenugreek powder 1/4 Tsp
- Oil 2 Tbsp
- Salt

Instructions
- Preparation for Adai Dosa:-
- In a big pan add all the dals and wash for 3-4 times.or You can leave dals overnight.
- Add enough water in a pan and soak dala for 3-4 hrs.
- In another big pan add rice and wash for 3-4 times.
- Add red chilies to washed rice and soak in enough water for 3-4hrs.or you can leave rice overnight.
- Drain the water from dal and rice.
- In a mixer jar add red chilies and rice.Add 2-3Tbsp of water and blend into slightly coarse thick batter
- Transfer the rice batter in a big bowl.
- Add dals and ginger in a mixer grinder.
- Add 2-3Tbsp of water to dals and blend to slightly coarse batter.
- Add dals batter to rice batter and mix well.
- Adai dosa batter is ready.If you want you can rest better for 2-3 hrs
- Heat a non tawa over medium heat and apply 1Tsp of oil.
- Add chopped onion,salt ,hing, coriander leaves to batter.
- Mix everything well.
- The consistency of batter is thick,but of spreading consistency.
- Before pouring batter on tawa make sure tawa is hot.
- Pour one ladle of batter and spread it quickly like dosa.Spread thick or thin as you prefer to eat.
- Add 1/2 Tsp of oil/ghee across the edges of adai dosa and cook on medium heat.
- When dosa cooks on one side,the edges loosen from the tawa slightly.
- Flip and cook on other side,cook from both sides until it turns crispy.
- Serve adai dosa hot with tomato chutney or with the choice of your chutney.
- Prepration for Tomato chutney:-
- Heat oil in a pan over medium heat.
- Add mustard seeds to hot oil.When it splutters add hing and curry leaves.
- Saute for few seconds.
- Add chopped onions and cook until turns translucent in color.
- Add chopped tomatoes and salt to cooked onions.
- Mix well and cook until tomatoes turn soft.
- Stir in between to avoid sticking of mixture.
- After 2-3minutes tomatoes turn soft,but there is too much liquid released by tomatoes.
- Stir and cook until mixture turns thick and no water is left in mixture.
- Add chili powder,sambar powder and turmeric powder.
- Mix well and cook for a minute ,now add fenugreek seed powder.
- Mix well and cook for a minute.
- Taste for seasoning and salt if required add more .
- Turn off the flame and allow it to cool down.
- Thakkali thokku is ready .
Notes
- The batter must be easily spreadable on tawa.
- If you prefer thin dosa add more water as required.
- Adjust seasoning as per your taste in tomato chutney..
- Use ripped tomatoes for thakkali thokku.
