Ingredients
- 1 cup Gram Flour Besan
- 1 teaspoon Turmeric Powder
- Salt to taste
- 1 pinch Baking Soda
- 2 Potatoes Boiled, Peeled and mashed
- 1 teaspoon Green Chili Paste
- 1 teaspoon Ginger garlic paste
- Handful Coriander Leaves chopped
- Red Chili Powder to taste
- ½ teaspoon Garam Masala
- 1½ teaspoon Lemon Juice
- 1 tbsp Oil
- ½ teaspoon Mustard Seeds
- ½ teaspoon cumin seed
- 1 pinch Asafoetida
- 4 Curry Leaves
- Dry Garlic Chutney for spreading
- Coriander or Mint Chutney, for spreading
- Sweet Tamarind Chutney for spreading
- Oil to deep fry

Instructions
- In a bowl add gram flour, salt, 1/2 tsp turmeric powder, baking soda and make coating consistency batter by adding water.
- Heat oil in a pan. Add mustard seeds and cumin seeds. When they crackle add asafoetida and curry leaves.
- Now add green chilli paste and ginger & garlic paste. Saute it for few seconds.
- Add 1/2 tsp turmeric powder, mashed potatoes, red chilli powder, garam masala, salt. Mix well.
- Add lemon juice and chopped coriander into it.
- Divide the mixture into small balls.
- Dip the balls into gram flour batter and deep fry them till they turn golden brown. Drain on absorbent paper.
- Slice the pav into half. Spread tamarind chutney and coriander or mint chutney on inner sides of pav.
- Now spread dry garlic chutney and stuff with vadas.
